Melon with Raspberry-Citrus Fruit Dressing

Ingredients

  • 1/2 cup frozen red raspberries thawed
  • 2 Tbsp. lemon juice
  • 1 Tbsp. canola oil
  • 1 Tbsp. sugar
  • 1 tsp. chia seeds
  • 1 to 2 tsp. grated orange zest
  • 4 cups honey dew or cantaloupe melon cubes or 4 wedges

Instructions

  • Combine all, but the melon, in a small bowl. (Note: For a thinner, crunchier dressing, serve immediately/for a thicker, slightly crunchy texture, refrigerate overnight. (The chia seeds will become gelatinous if allowed to sit overnight.)
