Overnight Raspberry Smushers

Ingredients

  • 1 1/3 cups frozen red raspberries
  • 1 cup light vanilla soymilk
  • 1/2 tsp vanilla extract
  • 4 tsp honey

Instructions

  • Place 1/3 cup berries in each of 4 (4-oz) mini mason jars, pour 1/4 cup milk over each, top each with 1/8 tsp vanilla and 1 tsp honey. Secure lid and shake well. Refrigerate overnight or up to 48 hours.
  • To serve, remove lids, stir and serve in the jars as mini glasses.

Notes

Note: It’s important to gently stir at time of serving to insure that all of the honey is incorporated into the drink and it also helps release some of the juice from the berries.
Cook’s Tip: Coat measuring spoon with cooking spray before measuring honey to prevent honey from sticking to spoon.
