Melon with Raspberry-Citrus Fruit Dressing
Ingredients
- 1/2 cup frozen red raspberries thawed
- 2 Tbsp. lemon juice
- 1 Tbsp. canola oil
- 1 Tbsp. sugar
- 1 tsp. chia seeds
- 1 to 2 tsp. grated orange zest
- 4 cups honey dew or cantaloupe melon cubes or 4 wedges
Instructions
- Combine all, but the melon, in a small bowl. (Note: For a thinner, crunchier dressing, serve immediately/for a thicker, slightly crunchy texture, refrigerate overnight. (The chia seeds will become gelatinous if allowed to sit overnight.)
