Raspberry Meyer Lemon Chia Jam
2 cups frozen raspberries
2 tablespoons maple syrup
2 tablespoons chia seeds
1 teaspoon vanilla extract
2 tablespoons Meyer lemon juice
1 teaspoon Meyer lemon zest
- Put all ingredients into a small saucepan and boil several minutes until thick.
- Transfer to sterilized glass jar and allow to cool and thicken overnight.
