

Raspberry Peach Coconut Popsicles
Enjoy a cool treat with your summer favorites like raspberries and peaches! These popsicles are easy to make and even more fun to eat.
Ingredients
- 2 cups coconut yogurt plain or flavored
- 5-8 canned peach wedges + about ¼ cup canned peach juice
- 1 cup frozen Washington red raspberries
- ¼ cup chocolate chips
- 1 Tbsp. coconut oil!
Instructions
- Blend yogurt and peaches in blender until smooth.
- Fold in raspberries.
- Pour evenly into 8 popsicle molds. Place in freezer for 8 hours or until frozen.
- In a microwave safe bowl, melt chocolate chips and coconut oil on HIGH 30 seconds at a time, stirring between until smooth.
- Drizzle popsicles with melted chocolate and allow to harden. Wrap in plastic wrap and return to freezer until ready to eat.
