Raspberry Peach Coconut Popsicles

Enjoy a cool treat with your summer favorites like raspberries and peaches! These popsicles are easy to make and even more fun to eat.

Ingredients

  • 2 cups coconut yogurt plain or flavored
  • 5-8 canned peach wedges + about ¼ cup canned peach juice
  • 1 cup frozen Washington red raspberries
  • ¼ cup chocolate chips
  • 1 Tbsp. coconut oil!

Instructions

  • Blend yogurt and peaches in blender until smooth.
  • Fold in raspberries.
  • Pour evenly into 8 popsicle molds. Place in freezer for 8 hours or until frozen.
  • In a microwave safe bowl, melt chocolate chips and coconut oil on HIGH 30 seconds at a time, stirring between until smooth.
  • Drizzle popsicles with melted chocolate and allow to harden. Wrap in plastic wrap and return to freezer until ready to eat.
